Black Bean Burritos

4 15.5 ounce cans black beans, canned — rinsed and drained
1 1/2 cups red onion — finely chopped
1 14 ounce can Mexican-style stewed tomatoes
1 28 ounce can canned tomatoes
1/4 pound onion — minced (3/4 cup)
24 6-inch flour tortillas
1 pound monterey jack cheese — grated, divided

Grate cheese, reserving 1 cup. Drain and rinse beans. Chop red onion.
Combine remaining cheese, beans and red onion.

Wrap stack of dozen tortillas in damp paper towel. Place on microwave safe
plate and zap for 1 minute.

Spread about 1/3 c. bean filling across the middle of one tortilla. Wrap
tortilla around filling and place seam side down in greased 15×10 pan.
Repeat with remaining tortillas.

Heat the second dozen when you’ve used up the first dozen, and place in a
second greased 15×10 pan.

Mince the ¾ c. onion in food processor, or use the rest of the red onion
if you have it. Add both kinds of tomatoes, undrained, and buzz till
smooth. Pour evenly over both pans of tortillas.

Top with ½ c. grated cheese each. Bake in preheated 350° oven for 15
minutes or till burritos are hot and cheese is melted.

3 12 ounce cans orange juice, frozen concentrate
9 12 ounce cans water
3 cups sugar
3 envelopes orange Kool-Aid
6 quarts water

For each one gallon pitcher, combine 1 can concentrate, 1 package Kool-Aid
and 1 cup sugar.

Add three cans of water to each pitcher. Stir to dissolve sugar and
concentrate.

Add 2 quarts water to each pitcher and stir.
