Comments: Cadie picked this to cook tonight. It’s not too spicy, so the little kids will eat it, but it’s not all that outstanding, either. Good enough, and pretty easy to make. The best part is the melted cheese on the corn chips.

4 pounds 80% lean ground beef — or ground turkey
1 pound onions — chopped (2 1/2 cups)
6 garlic cloves — minced
1 16 ounce carton reduced fat sour cream
2 14 ounce cans mexican-style stewed tomatoes — pureed
1 12 ounce can tomato paste
1 6 ounce can black pitted olives — drained and sliced
2 14 ounce bags tortilla chips — *see Note
1 pound monterey jack cheese — grated
paprika

Brown ground beef. Add onions and garlic and saute. Drain grease.

Return meat mixture to pan. Stir in sour cream, pureed stewed tomatoes,
tomato paste, and olives. Heat through but don’t boil.

In a 2 greased 4 quart (10 x 15) baking dishes, layer 2/3 chips, coarsely
crumbled, all of meat mixture, and then remaining crumbled chips.

Bake at 350 degrees for 40 minutes. Remove from oven and distribute cheese
over the top. Sprinkle with paprika. Return to oven and bake 5 minutes
more.

TO FREEZE: Place cheese in separate bag and attach to casserole pan before
freezing. To serve, place frozen into 350 degrees oven. Bake covered 1 1/2
hours or until hot and cooked through. Sprinkle reserved cheese on top and
return to oven to melt.

2 16 ounce packages frozen baby carrots
2 cups water
2 teaspoons sugar
2 tablespoons butter
salt — to taste
pepper — to taste

Combine carrots, water, and sugar in a 3 1/2 quart saucepan. Cover and
bring to a boil. Reduce heat to a slow boil and cook till carrots have
broken apart and are just warmed through. Drain and return to pan. Toss
with butter and season to taste with salt and pepper.
